    As a registered dietitian, my recipe for these chocolate almond flour pancakes are a delicious and nutritious alternative to traditional pancakes.

    Made with almond flour and cocoa powder, these pancakes are gluten-free, low-carb, and packed with protein.

    Ingredients for Chocolate Almond Pancakes

    • Almond Flour is made from ground almonds and is rich in protein, healthy fats, and fiber. I love using this in many recipes including these vegan 3-ingredient cookies, healthier snickers bars and paleo banana bread.
    • Cacao Powder. This recipe uses dutch cacao for that dark chocolate flavor, but you can use any cocoa or cacao powder. Dutch cacao works wonderfully in this recipe for my sweet potato brownies as well.
    • Baking Powder to make the pancakes light and fluffy.
    • Eggs which add moisture, structure, and rise to these pancakes.
    • Coconut sugar is anatural sweetener made from the sap of coconut palm trees. It has a lower glycemic index compared to refined sugar and provides a mild caramel-like flavor.

    Tips for Almond Flour Pancakes

    Here are some expert tips to ensure your pancakes turn out just the way you want them:

    Allow Batter to Rest

    After mixing the batter, let it rest for about 10-15 minutes. This resting period allows the flours to hydrate, resulting in a smoother batter consistency and better pancakes.

    Flipping

    When cooking your pancakes, be patient before flipping. Wait until you see bubbles forming on the surface and the edges are set before flipping.

    Maintain Moderate Heat

    Cook your pancakes on medium heat. This prevents over-browning and ensures that the inside cooks evenly without drying out.

    Nutritious And Delicious Topping Ideas

    • Fresh Berries: Strawberries, blueberries, raspberries are my favorite.
    • Greek Yogurt: To add creaminess, a slight tang, and additional protein.
    • Sliced Bananas: I love the combination of banana with chocolate. The bananas also add additional sweetness.
    • Chopped Nuts: Almonds, walnuts, pecans for crunch and healthy fats.
    • Nut Butter: Almond butter, peanut butter, or cashew butter for extra nuttiness.
    • Honey or Maple Syrup: For additional natural sweetness.
    • Cottage Cheese: For additional protein and creaminess.

    Storage and Freezing

    If you have leftovers, you can store them in an airtight container in the refrigerator for a few days.

    These pancakes also freeze well.

    Simply place parchment paper between each pancake, and they'll be ready for a quick reheat in the toaster.

    With minimal preparation and easy-to-follow steps, you can whip up a batch of these paleo almond flour pancakes for a quick and nutritious breakfast.

    Ingredients

    Wet:

    • 2 eggs whisked
    • ½ cup almond milk
    • 2 tablespoon coconut sugar
    • 1 tablespoon olive oil
    • 1 teaspoon vanilla extract

    Dry:

    • 1 cup almond flour
    • ¼ cup cacao powder
    • 1 teaspoon baking powder

    Instructions

    • In a mixing bowl, combine the wet ingredients: whisked eggs, almond milk, coconut sugar, olive oil, and vanilla extract.
    • In another bowl, sift the dry ingredients together to remove any clumps: almond flour, cacao powder, and baking powder.
    • Gradually add the wet ingredients to the dry ingredients, stirring until you have a smooth batter.
    • Heat a pan or griddle over medium heat and add 1 tablespoon of oil.
    • Pour a ladle of the pancake batter onto the hot pan. Cook until the edges start to brown and bubbles form on the top.
    • Carefully flip the pancake and cook the other side until it's golden brown.
    • Repeat with the remaining batter, adding more oil to the pan as needed.
    • Serve your delicious almond flour and cacao pancakes with your favorite toppings, such as fresh berries, maple syrup, or a dollop of yogurt.

    Sifting breaks up the clumps that almond flour can have. Use a fine mesh strainer to sift dry ingredients.
