This moist, gluten-free, protein mug cake does not use any protein powder or baking powder to achieve a fluffy, moist, and decadent texture.
Thanks to the additions of egg and PbFit powder, this recipe contains 18g of natural protein.
While I do like to experiment with protein powder in baking, it's always possible to meet your protein goals without protein supplements.
This recipe is also gluten-free, does not include baking powder, and is made in under 2 minutes.
Protein mug cakes along with protein bars are an easy way to get in additional protein throughout my day.
Why you'll love this recipe
Taste and Texture:
Besides the fact that this recipe is quick and easy to make, the taste and texture is unbeatable.
Moist and Spongy:
Thanks to the mashed banana and egg, this mug cake turns out wonderfully moist and spongy.
It has a tender crumb that melts in your mouth, offering a satisfying cake-like texture.
Nutty and Rich:
The addition of pb fit (peanut butter powder) bring a nutty richness to the cake that complements the banana very well.
Balanced Sweetness:
The natural sugars in the mashed banana provide just the right amount of sweetness, without the need for added sugars.
It's a treat that's pleasantly sweet without being overly sugary.
Fluffy and Light:
Unlike some other gluten-free desserts, this mug cake doesn't come out overly dense.
It retains a pleasing lightness and fluffiness, making it a satisfying yet not overly heavy dessert option.

Microwaving Time and Instructions
Microwaving the mug cake is a key step in ensuring a delightful texture and taste. Here are the recommended microwaving instructions to follow:
Cooking in Short Intervals:
When microwaving, it's crucial to use short intervals, typically around 30 seconds each. This approach helps prevent overcooking and ensures the cake turns out just right.
Microwave Time Variability:
I ended up cooking my mug cake for 2 minutes in 30 second intervals.
Keep in mind that the exact microwaving time can vary depending on the wattage of your microwave oven. As a general guideline, start with 30 seconds and then check the cake's progress.
Visual Check:
After each 30-second interval, visually inspect the cake. It should rise and set, with the center no longer appearing wet.
To test doneness, insert a toothpick or cake tester into the center. If it comes out mostly clean with a few moist crumbs, the cake is ready. If it's still gooey in the middle, it needs a bit more time.

Mug Type Matters:
It's worth noting that the type of mug you use can impact microwaving times.
Microwave-safe mugs with thinner walls might require less time than thicker ceramic mugs.
Be mindful of the mug's material and adjust the microwaving time accordingly.
Power Levels:
If your microwave allows you to adjust power levels, consider using 50-70% power for a more even and gentle cooking process.
This can help ensure that the cake cooks evenly without risking dry edges or an undercooked center.
Resting Time:
Once the cake reaches your desired texture and doneness, carefully remove the mug from the microwave (remember, it will be hot) and let the cake rest for a minute or two.
During this brief resting period, the residual heat will continue to set the cake.

Variations and Customizations:
This recipe is a blank canvas and can be easily customized to additional toppings and flavors. Here are some of my favorite additions.
Chocolate:
Fold in some chocolate chips or chunks into the batter. This addition will create pockets of gooey, chocolatey goodness that pairs so well with the nutty peanut butter flavor and banana.
Nutty Crunch:
For an extra layer of texture and flavor, chop up your favorite nuts—such as almonds, pecans, or walnuts—and sprinkle them into the batter.
Spice It Up:
Add a pinch of your favorite spices, such as cinnamon, nutmeg, or even a dash of espresso powder. These spices can provide a delightful depth of flavor.
Drizzles and Toppings:
After microwaving, top your mug cake with a drizzle of honey, a dollop of Greek yogurt, or some natural peanut butter.
Tips for A Perfect Mug Cake
How to make sure your mug cake comes out perfect every time.
Thorough Mixing:
Begin by ensuring that you thoroughly mix the ingredients.
The mashed banana, coconut flour, egg, and pb fit should be well combined to create a smooth, consistent batter. This ensures even cooking and a uniform texture.
Use a Microwave-Safe Mug:
Always use a microwave-safe mug or container to prepare your mug cake.
It's not only essential for safety but also helps in even cooking.
Adjust for Your Microwave:
Keep in mind that microwave cooking times can vary based on the wattage of your microwave oven.
If you know your microwave's wattage is significantly different from the average, consider adjusting the cooking time accordingly to prevent overcooking.
Prevent Spillage:
While not always necessary, placing a microwave-safe plate underneath the mug can help prevent spills in case the cake rises rapidly.
Don't Overcook:
Overcooking can result in a dry or rubbery texture.
Pay close attention during microwaving, and use the recommended short intervals to check for doneness.
The cake should be moist but not undercooked or overcooked.
Microwaving Time:
As mentioned earlier, microwave in short intervals, typically around 30 seconds, to have better control over the cooking process.
It's easier to add more time if needed than to salvage an overcooked cake.
Cooling Time:
Allow your mug cake to cool slightly before digging in. It continues to set during this time, ensuring a better texture and making it easier to handle.
Enjoy Fresh:
Mug cakes are best enjoyed fresh out of the microwave when they are warm and at their peak of flavor and texture. They're perfect for a quick and satisfying dessert fix.
